What I Eat in a Day as a Health Coach

Have you ever wondered what a Health Coach eats in a day? It's one thing to stock up on healthy recipe books that line your kitchen counters (and collect dust) or to have a Pinterest board of recipes bursting at the seams -- but seeing how easily it can be integrated into your busy, everyday life is what makes lasting change seem doable. Planning is simple, but taking action takes a bit more commitment and can be more difficult to do.

I get asked often what I eat in my everyday life and how I make it simple enough to easily integrate it into a busy day without a lot of extra prep time. Today, I'm going to share with you what I eat in a day and how easy it is to eat foods that nourish you without spending hours in the kitchen prepping.

In a typical day, first, I start my day with a breakfast smoothie consisting of 3-4 greens, 1-2 lower carb fruits, half an avocado and some nuts and seeds.

My lunch is some organic oatmeal, honey, chia seeds, and usually some blueberries, although occasionally I will go with a banana.

My dinner could be some grilled chicken with a nice salad, and/or veggies, or salmon with some roasted potatoes or cabbage. I use lots of fresh herbs and spices no matter what I prepare.

My favorite snack is “Alyssa’s Healthy Vegan Bites”. They are oatmeal based, all natural and high in fiber.

And I make sure to drink at least half of my body weight in ounces of water throughout the day to stay hydrated. Sometimes I love to infuse my water with fruit such as lemons, strawberries, blueberries, or oranges.

And yes, even Health Coaches eat dessert. Some of my favorite healthy dessert options that aren't full of processed sugars are low sugar ice cream, or if I am in the mood to bake, chocolate chip cookies with monks fruit as a sweetener and using almond flour. You can enjoy a few with this recipe.

One of my most passionate things to teach as a Health Coach is that healthy eating does not have to be complicated, expensive, or take a ton of planning. You can achieve your health goals with the time you have right now, no matter how busy.
